Chicken Vegetable Soup

Ingredients

  • 2 quarts homemade chicken stock

  • 2 cups cooked organic chicken, shredded and chopped

  • 4 cups organic marinara sauce

  • ¼ cup white wine

  • 6 cloves garlic, chopped

  • 1 onion, diced

  • 2 shallot, diced

  • 1 stalk organic celery, diced

  • 1 small organic carrots, diced

  • 1 tablespoon Dijon mustard

  • 1 tablespoon parsley flakes

  • 1 teaspoon of thyme

  • 1 tablespoon turmeric

  • 2 cups organic frozen mixed vegetables

  • 2 cups fresh kale, chopped fine

  • Finely grate Parmesan (optional)

Instructions

  1. Combine onion, shallot, celery, and carrot to a well-oiled soup pot and cook over medium heat until soft. Add mustard, parsley, thyme, white wine and chicken and simmer for 3-5 minutes. Whisk in marinara, stock, turmeric, and garlic and simmer for 30 more minutes. Ten minutes before it’s ready to serve, add frozen mixed vegetables. Cook 5 minutes before adding kale. Serve with Parmesan.
