Chicken Vegetable Soup

Ingredients
2 quarts homemade chicken stock
2 cups cooked organic chicken, shredded and chopped
4 cups organic marinara sauce
¼ cup white wine
6 cloves garlic, chopped
1 onion, diced
2 shallot, diced
1 stalk organic celery, diced
1 small organic carrots, diced
1 tablespoon Dijon mustard
1 tablespoon parsley flakes
1 teaspoon of thyme
1 tablespoon turmeric
2 cups organic frozen mixed vegetables
2 cups fresh kale, chopped fine
Finely grate Parmesan (optional)
Instructions
Combine onion, shallot, celery, and carrot to a well-oiled soup pot and cook over medium heat until soft. Add mustard, parsley, thyme, white wine and chicken and simmer for 3-5 minutes. Whisk in marinara, stock, turmeric, and garlic and simmer for 30 more minutes. Ten minutes before it’s ready to serve, add frozen mixed vegetables. Cook 5 minutes before adding kale. Serve with Parmesan.
